Black Tea - Boiling water & steep for 3-5 minutes.
Black Flavored Tea - Boiling water & steep for 2-4 minutes
Puerh - Boiling water & steep for 7-10 minutes or more
Oolong - Water 190-200 degrees & steep for 3-5 minutes
Green Tea - Water 160-180 degrees & steep for 2-4 minutes
Herbal and Decaf - Boiling water & steep 4-6 minutes

The bitterness some people associate with tea typically results from over-brewing. Over time you may adjust these directions to suit your own tastes. Preparing tea properly is not hard, but timing and temperature are crucial.

How to Brew a Proper Cup of Tea
1. Boil a kettle of freshly drawn water.
2. Pour one inch of hot water into pot. Swirl to warm, then pour out through spout or top.
3. Measure in the tea using one tsp. per person and one for the pot.
4. Add rapidly boiling water and steep for the time listed above.
5. Strain to cups or pull out contained leaves (T-sac, strainer, tea ball). Some leaves can be brewed again,ask your tea supplier.
6. Dispose of used leaves in garbage can or compost pile.

How to make great instant iced tea
Follow the instructions for brewing regular hot tea on the back of the package, except increase the amount of tea by 50%. When the tea has brewed the suggested amount of time, strain it, and pour directly into a container (plastic or glass) filled with ice. As the ice melts, add either more tea or ice to suit your taste.

How to make iced tea concentrates
Take 1 1/4 cup (dry measure) of tea. This is a general guideline, adjust to suit your taste and your tea. Brew with 8 cups water. Follow regular hot tea instructions for correct brewing temperature and time. Strain into another container. Keep refrigerated. Dilute at a 1 part concentrate to 2 parts water ratio. Serve over ice.

How to make cold brew iced tea
Place 8-10 rounded tsp. of tea in a gallon jug, either loose or in an #4 T-Sac. Fill the jug with cold water. Let steep overnight (at least 8 hours). Strain or just remove the T-Sac. Serve over ice. This method requires less tea, but black teas may turn out lighter. Makes a very smooth tea.
